ACCOMPANIMENTS FOR SWEDISH GIN CURED SALMON

PREP TIME: 15 minutes REFRIGERATE: 1 hour or overnight TOTAL TIME: 15 minutes + refrigeration time
INGREDIENTS
Herbed Cream Cheese: Yield 1½ cups
- 8 oz. whipped cream cheese spread
- 1 Tbsp. fresh minced dill, or 1 tsp. dried dill
- 1½ Tbsp. fresh chives or green onion tops, minced
- ¼ tsp. GC Napa Valley Natural Marjoram Finishing Sea Salt
- ¼ tsp. GC Napa Valley Natural Culinary Lavender Tellicherry Pepper
Swedish-Style Mustard Dill Sauce (Hovmästarsås): Yield ½ cup
- 1 Tbsp. whole grain mustard
- 1 Tbsp. Dijon mustard
- 1½ tsp. fresh minced dill, or ½ tsp. dried dill
- 1 Tbsp. rice wine vinegar
- 2 Tbsp. GC Napa Valley Natural Orange Infused Honey
- ⅛ tsp. GC Napa Valley Natural Marjoram Finishing Sea Salt
- ⅛ tsp. GC Napa Valley Natural Lemon Tellicherry Pepper
- 3 Tbsp. GC Napa Valley Natural Meyer Lemon Olive Oil
Lemony Mayonnaise: Yield ½ cup
- 1 Tbsp. lemon zest
- 1 tsp. lemon juice, freshly squeezed
- 1 tsp. GC Napa Valley Natural Meyer Lemon Olive Oil
- ⅛ tsp. GC Napa Valley Natural Lemon Finishing Sea Salt
- ½ cup mayonnaise
TO PREPARE
Prepare Herbed Cream Cheese:
- Mix all ingredients together. Refrigerate 1 hour or overnight.
Prepare Swedish-Style Mustard Dill Sauce (Hovmästarsås):
- Whisk all ingredients except olive oil in a bowl. Slowly drizzle in the Meyer Lemon Olive Oil while constantly whisking to form an emulsion. Refrigerate 1 hour or overnight.
Prepare Lemony Mayonnaise:
- Mix all ingredients together. Refrigerate 1 hour or overnight.
TO SERVE
Transfer the condiments to appropriately sized dishes with utensils. Place alongside the plated Gravlax – Swedish Gin Cured Salmon.
