We had the right amount of heat, the right amount of soil moisture and the right length of ripening.

 

Harvest 2016 brought the end of a fantastic growing year. We had the right amount of heat, the right amount of soil moisture and the right length of ripening that will result in expressive wines.  The Chardonnay is now securely aging in barrel. The Cabernet Sauvignon is still in fermentation- we never rush this critical part of winemaking when the layers of flavors are gently transferred from the skins to the juice.

 

We had our first night harvest for our Cabernet grapes. Starting at three and 4 o’clock in the morning, temperatures were cool and the grapes stayed in pristine condition. They were rushed to the winery to be crushed. I tasted the juice as it was flowing from the grapes. Incredible!
