Easter weekend is upon us and we this weekend is often spent with friends and extended family at brunch. Many of us will tuck away our Easter bonnets during this unique 2020 Easter, but we would like to offer our Wine Country Foodie inspired suggestions on how to make your Easter special at home and perhaps even a virtual on-line shared brunch.

With shopping a challenge, we selected recipes from our Wine Country Foodie collection that easily adapt to ingredients you probably have in your pantry.  Plus, they are so easy!  

Let’s Toast!

A delectable addition to your Easter Brunch could be a variety of Layered Breakfast Salad Toasts. This is sure to please every member of your family because they can pick the toppings that they like! At O’Connell family, we pair them with our new release 2017 Pietro Family Cellars Chardonnay, Oak Knoll District of Napa Valley or 2016 Pietro Family Cellars Tusca Red Wine, Napa Valley a Super Tuscan blend of Sangiovese, Merlot, and Cabernet Sauvignon.

PREP TIME: 15 minutes COOKING TIME: 20 minutes TOTAL TIME: 35 minutes

What we love about this brunch recipe is that you can’t do it wrong. Most of us have bread (if you don’t you can sub waffles) hopefully we all have some fresh greens. Layer toasts with a series of different toppings like poached or boiled eggs, bacon, sausage, and fresh veggie drizzled with some lovely olive oil and finishing salts to create the perfect layered spread. You cannot mess this up. Use what you have in your kitchen!

Our recipe calls for putting 2-3 oz. dressed salad onto toasted bread. Place one poached egg on top of salad. Sprinkle with GC Napa Valley Peppers , GC Napa Valley Finishing Sea Salt and optional garnish of chives or parsley. Select from the suggested additions to create variations to suit taste preferences. Then place layered Breakfast Salad Toast on fun individual salad plates or make it a brunch buffet with the plain layered toast accompanied by an array of the optional toppings arranged on our barrel stave platter. Create your own layers….deliciously fun!
