67% Sémillon 33% Sauvignon Blanc
The Wine
We harvest each component when the fruit is at its optimum. The Sauvignon Blanc was harvested earlier to maintain higher acidity, in early September 2018. The Sémillon fruit was left on the vine 2 weeks more to ripen with juicy apricot aromatics. Together, they create our style of crisp pear aromatic Sauvignon Blanc blended rich creamy white peach Sémillon. The grapes at harvest were simply delicious.
Tasting Notes
The aromatics leap from the glass with notes of ripe plum, pear, white peaches, lemon zest and fragrant quince. The flavors echo the aromas with a deep, creamy texture. It will age like an old world Bordeaux. The finish is terrific- with great length, broad on the palette. A fabulously clean and complex wine.
Vineyards
The Sauvignon Blanc and Sémillon grapes were grown in Pope Valley at an elevation 715 feet on the Whisky River Ranch using sustainable farming practices. Hot daytime temperatures ripen the fruit to perfection and 55 degree nights maintain beautiful acidity.
Food Pairing
The perfect wine for cheese!!!! Pair with aged goat cheese such as Humboldt Fog, Gruyere or a softy flavored blue cheese accented with a drizzle of honey. Terrific with seafood- sautéed scallops, coconut shrimp. Try roasted vegetable and garlic pizza. End with a decadent 50% milk chocolate treat. Or just sip chilled as an aperitif.
Oak Program
The Sauvignon Blanc was stainless steel fermented and aged on its lees for 24 months. The Sémillon was aged it in French Oak for 12 months for richer body.
