85% Sauvignon Blanc 15% Sémillon
Harvested in September 2019, the long, relatively mild finish to the growing season allowed the grapes to fully ripen,creating our style of a crisp yet sumptuous white wine. Grown in Pope Valley, a region perfectly suited to Sauvignon Blanc, the grapes were vibrant and expressive at harvest. Stainless steel fermentation of the Sauvignon Blanc sharply defined the structure, with mouth- watering bright acidity. A mildly oak-aged Sémillon added a round texture. All flavors were heightened by extended 2 year Sur Lie aging, a signature technique of Pietro Family Cellars. An amazing vintage.
The aromatics leap from the glass with notes of ripe pear, white peaches, lemon and lime zest. The flavors echo the aromas with a deep texture.
The Sauvignon Blanc and Sémillon grapes were grown in Pope Valley at an elevation 715 feet on the Whisky River Ranch using sustainable farming practices. Consistent hot daytime temperatures between 95-105 degrees ripen the fruit to perfection and cool 55 degree nights maintain beautiful acidity.
Sip as an aperitif. Pair with lavender honey drizzled goat cheese or Gruyere, sautéed scallops and seafood in general and a decadent 50% milk chocolate treat.
Sauvignon Blanc was stainless steel fermented, sur lie for 15 months. The Sémillon received short-term aging in specialized French oak barrels made just for Sémillon
